April
Spring Blossom
Hawthorn, apple and dandelion off the orchard next door. It sets thick and creamy, pale as butter, gentle as a Sunday.
A family honey farm · Holloway Lane, Herefordshire · 41 hives
Honey that tastes like the month it was made.
Raw, unheated, never blended.
Kept by the same family since 1987.

Hawthorn, apple and dandelion off the orchard next door. It sets thick and creamy, pale as butter, gentle as a Sunday.
June
The hedgerows go white with bramble and the bottom field goes pink with clover. Runny, golden, a little floral — our everyday jar.
August
Twelve hives ride up onto the Black Mountains in the back of Dad's van. They come home with honey thick as jelly — smoky, almost bitter. People drive for this one.
October
The last flow of the year. Dark, strong, sets like toffee in the comb. We leave every drop of it in the hives for the bees to winter on.

Every October the ivy honey stays in the hives. No sugar syrup, no heating, no blending with anyone else’s honey. If a colony has a bad summer, it gets the year off.
Keeps the hives. Has been stung 1,400-odd times and insists on counting.
Builds the frames, drives the van, and runs the extractor at 5 a.m. so the kitchen smells of wax by breakfast.
Names every queen. This year’s include Marigold, Duchess and Big Sandra.
Started it all with two hives in 1987. Still checks the jars at the stand every morning.
At our gate on Holloway Lane, every day from first light till dark. Jars on the shelf, tin on the post, card reader if you’ve no cash.
